Ingredients for 4 people:
- 300 g peeled king prawns
- 3 deboned and diced chicken thighs
- 2 cloves of garlic chopped
- 6 shallots
- 100g of green peas
- 1 tsp of lemongrass paste
- 3 Kaffir lime leaves
- some curry powder
- salt and pepper
- 1 pinch palm sugar
- 1tsp of chopped chilli
- 1 tbsp coriander leaves
- 2 tbsp of fish sauce
- 2 tbsp of soy sauce
- 400 ml of coconut milk
- Rice
Preparation:
- Heat up some VOM FASS rapeseed oil in a pan
- Add the sliced shallots and leave them to caramelise
- Add chopped garlic
- Add the coconut oil step by step; Add lime leaves, chopped chilli, fish sauce, soy sauce, palm sugar, curry powder; season
- Cook the prawns and chicken separately; add to the rest of the ingredients when cooked
- Cook the rice
- Serve with chopped coriander and chopped toasted peanuts
